Ciaò Thyme Catering
Just say no to cheese cubes, chafing dishes, overcooked salmon, and soggy Caesar salad. Ciaò Thyme Catering, based out of Bellingham, will change every preconceived notion you have about catering. In fact, they should not really be called caterers at all, more accurately, a restaurant without walls. All the food is prepared just before the wedding, cooked on-site and served hot from the oven or grill. Words like organic, fresh, local, seasonal and innovative only begin to describe the feast Ciaò Thyme creates from scratch for every wedding. Fresh fruit skewered on a mojito-filled pipet gives you a burst of lime with every bite. Whole rockfish, sent from Alaska the day before the wedding, baked in a salt crust, guaranteeing a gasp from every guest. Zucchini flowers straight from the field are stuffed with ricotta and parmigiano and fried to order. These are just a few of the ideas Jessica and Mataio Gillis, the owners of Ciaò Thyme, have brought to their clients.
The Gillis duo sits down with each client before the wedding and writes a custom menu that not only suits the clients’ tastes, but also pairs flavors that work well together. Each new menu takes advantage of seasonal produce and any regional cuisine preference of the client. Ciao Thyme offers menus in a wide range of cuisine bases. Mataio is classically trained in French cooking and he continues to expand his repertoire with yearly food field trips to learn from the source. So, fresh made papparadelle pasta, halibut steamed in banana leaves and lemongrass broth, tacos al pastor with fresh salsas, are all possibilities depending on your theme.
Not only is Ciaò Thyme’s food vibrant, scrumptious and creative, their presentation takes catering to a whole new level. Mountains of local salad greens tossed with fresh blackberries, goat cheese and local hazelnuts are served in a handmade wood bowl with cherry wood utensils. Fresh grape leaves weave their way in and out of handmade ceramic platters. Chilled fruit soups are served in square shot glasses to sip before the ceremony. Imported cheeses and cured meats are so beautifully presented, that they can serve as edible centerpieces (a nice alternative to flowers.) Fresh flowers serve as garnishes and buffet centerpieces to compliment the beauty of the food. If food is important to you, you will find kindred spirits at Ciaò Thyme.
